Deliciously Healthy Orange Cranberry Muffins

My mom LOVES Orange Cranberry Muffins. I adapted her recipe so she could enjoy them while staying healthy! Cranberries are full of antioxidants, rich in vitamin C & E, contain good amounts of the minerals manganese & copper and are high in fibre and phytonutrients. 

These babies are naturally sweetened, vegan, easy to make and are perfect for breakfast or an afternoon snack. 

Ingredients: 

2 cups organic whole wheat flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp sea salt
3/4 cups apple sauce
2 flax eggs
1/4 cup melted coconut oil
Zest of an orange
3/4 cup orange juice (preferably from actual oranges)
1 tsp vanilla extract
1/4 cup maple syrup
1 1/2 cup fresh cranberries

Instructions: 

Combine the wet ingredients & the dry ingredients separately and then slowly add the dry to the wet ingredients. Bake for 25 – 30mins at 375 degrees. Yum!
